Will I be able to buy CC on the web with ease when it's released, or is preordering it the only way to be sure? I don't feel like getting it at the store since I already downloaded the files. One thing is for sure, I don't want to wait any longer than absolutely necessary to play.

There is absoluetly no way in hell that you won't be able to get your hands on a copy of CC the day of release.
If you're already downloading though, a download pre-order will be the fastest way I think.
