Just wondering if there were anyway to check the server/game population numbers anywhere? Steam has a good estimate but it is hardly complete.

Nope - they don't reveal this sort of stuff. About the closest you will get is Steam Stats.

Have they at least hinted whether they were able to get close to 500 per continent per side?

Pretty sure it's at 2k per cont.

If they really reached that number they are keeping suspiciously quiet about it...

Well, personally i have witnessed queues on Miller-EU (basically all the time when it's not down lol), and on Matherson-US.
That would imply those servers were full at that time, meaning they had 6k people on it.
My "main" server Ceres-EU never has a queue, but still feels quite busy (and surprisingly lag- and crash-free, yay).

As mentioned above, queues are an element to gauge population levels. Another method to infer pop levels is to toggle the "Enemy activity toggle" on the maps. The more zones that are orange-ish and red-ish on continent maps, the larger the current pop on the server. Then you can extrapolate with the population balance %.
It's only approximative but it's decent.

As long as the full capacity of one continent is unknown, it's all fishing in the dark.

Before beta started. After that I heard nothing solid concerning player numbers from any dev. If you have something I would be happy to know.
