Buffalo is great, nice deep flavor, more meaty and musky-tasting then beef.
Kangaroo is good, it has a flavor all to its own. Rabbit is a bit gamey, it can either be light or heavy-flavored. Turtle is a very nice, chewy meat, sort of like a clam but with more texture. All in all, in my book, the more rare the animal is and the more cruel the circumstances of its death, the tastier it is. Proven fact.
