Definately one of the greatest laughs I've had in anime was while watching GTO. One scene where Onizuka was dressed up as a ninja. Fuyutski came up to him like, "What are you doing?" It was just so funny when Onizuka went, "A commoner like you must not fall for a nameless ninja!" and then he got up and started to throw pretend shurikens or something and dissapeared. It was so incredibly random! I have no idea why I even laughed that hard.

Definately the end of Cowboy Bebop holds a place in my heart as well.
