I would seriously be unhappy... I like Inf, Heavy, Max, etc. I pull whatever I think is needed at the time.
That said.... If I had to pick only 1? Engy... hands down. I drive vehicles too much, enjoy placing mines (both AV & AI)... and the various weapons can be tailored to both close-quarters, as well as medium/long range.... especially with the SMGs now in place (especially with unlimited ammo of engy)... I love those for Engy in Bio Labs and buildings.
