When someone pulls a knife on you, or a gun, you
DONT try to be a hero. Either do your best to negotiate while showing submission, or run like hell. Unless the guy is actually trying to stab you with the knife.
Secondly, you don't try to kick the knife out of somebody's hand. Bad move. Then they just slash your leg open. Your only bet is to wait until they make a thrust, avoid it, grab their wrist and twist it so that they are arm barred. Then you take your other hand and slam your knuckles repeatedly into the underside of their wrist, which will force their hand open, making the attacker drop the knife. Don't try to pry his fingers open, as it takes too damn long, which is dangerous. Once the knife is dropped, push the attacker away while you retrieve it.
Another, more desperate technique, is to break their elbow. This is accomplished by grabbing the attacker's arm, twisting it so that it is straightened out (like you were about to arm bar) and then slamming the palm of your other hand as hard as you can into their elblow.. If you maintain a firm grip on the guys arm, you will probably succeed in breaking his arm or at the minimum causing him great amounts of pain. If your life is in danger, better to put him in a sling for 6 weeks than have yourself in a coffin for the rest of eternity.
My younger brother was attacked by a drunk kid with a knife, and knowing his share of martial arts, he was able to get the knife away with only a few minor cuts, as the kid had my brother backed into a position where he couldn't get away. He did the first technique, but varied it slightly by slamming the kid the the ground. The kid rolled and broke out of the arm bar, but my brother managed to step on the kid's arm and grind into his wrist, making him let go of the knife. Then the cops came and took care of the rest of the situation.
Its always a good idea to learn this shit in case you are ever confronted with a situation that is life-threatening.
