Yeah, in the event that the aircraft is ferrying off-duty pilots back to their home airport.... otherwise, some Cessna pilot with 30 hours couldn't possibly take the controls of a 757 and fly it, let alone land it, safely.
There has to be reinforced cockpit doors and air marshalls. With all due respect, if a hijacker gets on a flight and starts causing mayhem, one hostage may go down, but the air marshall will take him out, while the pilots bring the rest of the 400 people back to the ground safely.
