Is there a button that lets you look backwards, particularly when in a vehicle or bird? or is there a way to set this up?

only in the liberator I think.

Otherwise all you can see is what you can see from moving your mouse in first person.

But you can go third person and zoom out a bit.

Yeah, use "T" for third person and then hold down "+" to zoom the camera out a bit. If you don't have mouse steering on you can freelook left or right out of your cockpit while in first person view, but thats it. The Liberator has a belly mounted camera you can use by pressing spacebar, and is as far as I know the only exception.

on the flipside, if you are a lib tailgunner, you can use the belly cam to look forward, and at the ground to watch the bombs (I feel vulnerable actually aiming my tailgun down to watch the mayhem.)

its also a smart thing for the tailgunner to do because usually enemy planes spiral up from below as you start dropping the bombs. Using the belly cam lets you see where they're going to pull up behind you so you can have him in the crosshairs of that mean 25mm cannon.
