Being an avid pilot and wanting to practice as much as I can, I've been playing BF 2142 and wait for it, wait for iiiiitttttt... Saints Row! May seem crazy, but you may want to try it out before you blast me. You'll see what I'm talking about if you do.

I doubt you will need very much practice for the planes in PS2. On top of being VTOL, they are generally slow-moving and easy to control. They were made for use with the mouse and keyboard, so I would imagine that it would not be difficult. If you are genuinely interested in learning how to fly planes in most games, I'd recommend Flight Simulator X.
