This is counterfactual. For the use case of a craft that must exert continuous gee loads (read: anything that could get into a turning fight), you need an input device that mimics control surface deflection magnitude. Even UAVs - where the cockpit is a desk in Clark County, pilots are drawn from the gaming generation, and any abstract input mechanism yet designed is on the table - use sticks.

I never really even noticed that the 3rd person view doesn't turn with your orientation until I read this. Sorry for comparison but im pretty sure BF3 no matter if your in 1st or 3rd the camera follows your every move.
Making the camera follow you completely in 3rd might make it too viable.

Didn't it follow in Planetside? I'm pretty sure it had a crosshair too as that's the first thing I noticed when I got into a vehicle, the crosshairs aren't there. However I always always fought in first person view.
