there was a tweet by higby saying he had the logitech 940 or w/e that set is, which is rudders, throttle and stick, so second question, as rabaan said is yes.
i would say BF3, especially if you will be TR.
TR is said to be fastest, light armored, quick firing and quick reloading. (quick passes)
NC are a bit slower, more armored and fire more powerful guns.(slower longer passes)
VS can turn on a dime and act as helicopters and jets (think flying saucer)
i say BF3 because the jets are rather delicate....1 stinger and you are basicaly screwed (no disabling effect in PS2), and because you have to avoid the ground unit as well as air units and get disabled and usually die quickly, it would be good practice for a TR unit as you will likely be doing hit and run attacks at near full speed much like BF3.
the PS vehicles take off vertically and can hover and side strafe to some degree as well, so using a BF3 chopper a bit could help familiarize yourself with being able to fly sideways.
